Am I alone who can't understand this argument and thinks it is problematic?

If you don't trust FSF (this seems silly for a GNU project), then you may
always switch from "version 2 or later" to "version 2 only" when version
3 comes and you actually disagree with it. It will however be harder if
not impossible to switch the opposite way.

I am not sure why you want to deny me and some others to use parts of the
Wiki in projects licenced under canonical "GNU GPL; either version 2 of
the License, or (at your option) any later version".

I don't feel like continuing to contribute to something I can't use in my
own projects without licensing troubles.

P.S. I sent an email on 12 Mar 2004 regarding this topic, it is still not
delivered, that asks all Wiki contributors to license their contributions
under the canonical licence for the benefit of existing GPL'd projects.
I would repost it, but now that James is against this idea, that message
does not seem to be actual. Unfortunately this also means there is no
point for me to contribute to this Wiki. Ten years from now most of the
projects are likely to use GPL version 3. Anything not compatible with it
loses in the long run.
