There is not much work to do for branching to happen.

git checkout -b stable 89ce53b3a0baafaccef80c2462bbed799169c759

then tell developers that patches good for 2.68.1 go in stable, rest
goes in master.  Stable may/should be merged into master.

You can postpone thinking about releases to later.  The only thing that
is better done now is ensuring that patches good for stable don't go
on top of patches introducing new stuff.
