Usually single is runlevel 1.
While the Grub menu is displayed:
select the linux line
press e to edit
select the line begining with kernel
press e to edit
at the end add a space and the number one as init parameter:
kernel XXXXXXXXXXXXXXXXXXXXX 1
press escape (back to the lines for linux)
press b to boot
(this modification won't be saved into menu.lst)
