Or you can use truncate from gnu coreutils:

$ du -sh file.img
0    file.img
vince@dell:~$ ls -l file.img
-rw------- 1 vince vince 1073741824 déc.  1 19:43 file.img
vince@dell:~$ ls -lh file.img
-rw------- 1 vince vince 1,0G déc.  1 19:43 file.img
