\cresc needs to be defined before a note. Yes, in the entire collection of postfix lilypond lilypond, there are two (or possibly more) prefix commands. ie
\cresc c'4^"start" c'4\!^"end"

I'll note that \cr and \cresc aren't in the documentation. Han-Wen, should they be? (just like with Werner's question, I have this vague recollection of them being taken out of the docs for some reason)
