I don't understand, because in the past it was possible to have several
scores, each one with its own size.
All the projects i work for, for several countries, require that.

The basic idea, is to make all scores ends at half-page-boundaries, or
page-boundaries. If offers many advantages.

When one score ends on the beginning of a page (it is common), you slightly
reduce its size to make it ends at the end of the previous page. Or increase
it to finish at the half, or end of the current page.
As each score content is different from the others, it must have its own
size to end at a half-page-boundary.
As you modify the sizes only slightly, the scores do not look really
different in size.
This trick is well-known for optimizing the page layout of score-books. You
find it in both ancient (more than one century) and modern score-books.
Therefore, it is far not surprising to find this feature in lilypond.

This leads to the next advantages: in a pdf with several hundreds of scores,
you can save many pages with this. It means greatly reducing the printing
costs, and contributing to save trees. It is important when working for
non-profit organizations with few money, as it is the cases.

Next advantages, for people using it (either pdf or printed), it is also
more practical, both to have fewer pages for the entire book, and that the
scores ends on page-boundaries, of half-page-boundaries.
