in lilybuntu 2.1, try:
  dpkg -l openoffice* | grep ^ii
I see 7 packages.  Doing a similar thing for evolution shows 4 packages.

I don't think it's a huge deal. I'm fairly confident that we could get the iso size down to 700 megs if we really tried, but I'm not certain it's worth trying. In terms of download size, it shouldn't make much of a difference to people. We're not recommending that anybody burn this to a CD -- actually, that would only complicate the install instructions.

So maybe it's not worth fussing with. I just tried playing around in aptitude a bit, and removing some of the evolution automatically tried to remove gnome-panel (yeesh, ubuntu is such a pig!). I could see this turning into

(that said, removing the remaining openoffice files saved 200 megs of installed files, and didn't threaten anything)
