As you can see in this comment, PDF metadata are not documented:
https://code.google.com/p/lilypond/issues/detail?id=1463#c7

I think that this deserves an issue in the tracker.

Some interesting link:

1) how to add metadata using an external tool (pdftk)
http://lists.gnu.org/archive/html/lilypond-user/2010-08/msg00461.html
http://jkwiens.com/2010/01/04/changing-pdf-metadata-on-ubuntu/

2) a request to be able to add a custom field in the header and tell
lilypond to export that field as metadata:
http://lists.gnu.org/archive/html/lilypond-user/2013-03/msg00708.html

this request was made on -user an nobody replied.

You can use one of these two commands to print the metadata in a terminal:
exiftool file.pdf
pdftk file.pdf dump_data
I was asking about PDF metadata several times in the last years and besides
pdftk just got answers like „you have to do it yourself“.

The problem with pdftk is, that it’s more or less dead and doesn’t compile on
some platforms (e.g. OSX) due to its very special and ancient dependencies. It
also has problems with Unicode. And I found no other tool that can do the same.
