This is one of the items in the Overview:
Use three hyphens in a row, @samp{---}, to produce a long dash---like
this (called an @dfn{em dash}), used for punctuation in sentences.
Use two hyphens, @samp{--}, to produce a medium dash--like this
(called an @dfn{en dash}), used to separate numeric ranges. Use a
single hyphen, @samp{-}, to produce a standard hyphen used in compound
words. For display on the screen, Info reduces three hyphens to two
and two hyphens to one (not transitively!).
I will add something about this "translation" not being done in contexts
like @code, but I don't really want to spell out every single place.
(Probably we should define that separately since it is needed in a
number of places, but anyway ...)
