No, seriously, it's their manual...
What might have confused you is that while the source has three
dashes---like this, the info program on terminal displays two
dashes--like this, because "--" is right representation of m-dash on
terminal.

Well, that's a bug in the browser. You can report it to its maintainers.
Or you can suggest a workaround how should m-dash be represented in
HTML. But such workarounds are often problematic.
