Seems like MathML output was dropped from mathjax because it is not
poratble:
https://docs.mathjax.org/en/latest/output/mathml.html#mathml-output

This page has some code to still use MathML output, but it is proably
not a good idea to try to maintain a deprecated feature in the long
term.

That being said, there could be some way to add to/modify/replace the
MathJax configuration block output by texi2any if somebody feels that
it will be used.
