Add
ADDITIONAL_OBJCFLAGS = -D$(GNUSTEP_HOST_OS)
to your GNUmakefile.[preamble | local] ... and you'll get sth like
gcc foobar.m -c [...] -Dlinux [...]
In your source,
#if defined(linux)
[...]
#endif
will do the trick.
