Thanks, it solved my problem!

I mostly use iso8859-15 fonts. By entering 

  defaults write NSGlobalDomain GSFontMask "*iso8859-1"
  font_cacher

before starting an application, it prevents the app from crashing. I
just made an attempt with the Calculator.app, I will now have a look at
some other applications.
