 Hmmm... I'm not quite sure what you mean by "remove a preference on the 
fly". System Preferences on MacOS X just lists whatever is in the 
various (~|System|)/Library/PreferencePanes/ directories. So, remove one 
from there and relaunch the app and it's gone. On some Linuxes, Unixes 
and OS X one could probably use kqueue to watch these folders and 
dynamically rebuild the list as needed.

 The Mac version (though not my GSSystemPreferences right now) actually 
also has a "table of contents" pane on which you can click on icons to 
switch between panes. MacOS also allows drag-and-dropping icons from 
this TOC into a toolbar for ready access. I chose to go with the style 
of Apple System 6's "Control Panel" and used an NSTableView at the left 
instead, simply because that was easiest to do.
