Okay, thanks for the explanation, I did
(setq sql-vertica-default-directory "/ssh:vertica|sudo:address@hidden:")
(setq sql-vertica-default-directory "/ssh:vertica|sudo:address@hidden/")
and still got

Host name must not match method "sudo"
