Yeah...that's '80s Casio bad.

For percussion instruments, including pianos, I'd be inclined to try dithering subsequent attack velocities a bit (in addition to cutting of the prior note). That is, randomly adjust them up or down a bit, perhaps with more weight given to "up." That *might* better represent what actually happens when a hammer/stick strikes a moving string/membrane.

But fluidsynth is a general purpose synthesizer and your approach probably represents the best compromise under the circumstances. It also seems to be consistent with current common practice.

Yes, It is possible for somes synthetic curious instruments that contain something special in the release phase.

Actually, I was thinking of some piano samplesets that incorporate hammer-thud in the release. They're probably not common (that kind of thing can better be done with separate samples and event mangling).

No, I am. I don't have access to a three-pedal grand, so I tend to forget how the crazy thing works. You're right, of course. Get n notes in t time and sustain them till the pedal's released...easy peasy. ;)
