your device might be slow to restart after ATZ
see, there is no OK after ATZ, it  is received only after AT+GMM:

you can send ATZ with a terminal program (eg. minicom) and see how
long it takes to show OK

also since you are using a real serial modem you can try if setting
hardware handshake helps:
in your gnokiirc change handshake = software to hardware
