Hm, that is true. It can be solved by either
- putting the PostgreSQL data onto
- local storage
- RAM disk
- applying a RAM based union file system to the /var/ data

In 0.9 we go a large step towards supporting that:
GNUmed 0.9 will create a temporary directory
/tmp/gnumed/ and each GNUmed instance will create its
own temporary directory below that
(say,/tmp/gnumed/gm-yl5cD-tmp/). Since compiling LaTeX
into PDF is done inside the temp dir and the temp dir of
a live CD really should live in RAM or local writable
storage this should automagically make documents work
from the live CD.
This is true for all other functions which use local
storage (document viewing, measurements plotting, etc).
