Among other effectivity attributes, docbook provides an "os" attribute.
By putting os="gnustep" or os="osx" on the image objects, you can easily
filter out one or the other.  This could be done as part of the build
process for each platform, before converting the docbook xml to the
final output format (html or pdf).

OS-specific text could be handled the same way.
