It seems to me that it can be easily fixed, e.g.:

if [ -z "${GRUB_DISABLE_LINUX_UUID}" ]; then
  GRUB_DISABLE_LINUX_UUID="true"
fi

Same for GRUB_DISABLE_LINUX_PARTUUID.

Does it make sense?
