environment: Set 'GUIX_ENVIRONMENT' to the profile.
* guix/scripts/environment.scm (create-environment): Set
'GUIX_ENVIRONMENT' to PROFILE.
* tests/guix-environment.sh: Test it.
* doc/guix.texi (Invoking guix environment): Document it.
