I believe this will do what you would like:
control:
all::
var = ( "some default value" )
AllowRedefinitionOf = ( var )
poopyHost::
var = ( "some other value" )
crappyHost::
var = ( "yet another value" )
plainHost::
othervar = ( "I am not a poopy host, so var is still default" )
