How about this? You open a LaTeX file and position the cursor on some colour you don't like or want to change. Then type C-u C-x = – a new window opens that also describes the properties of the word. By pressing RET on the underlined word you get a more detailed description that you can customise.
The use of colours is defined in lisp/textmodes/tex-mode.el – in GNU Emacs 22.
