not sure you can do it with help-helper, since i don't use it.
However, you can do it with html-mode. Just move cursor to a tag, then
press "Ctrl+c Backspace". (sgml-delete-tag)
You could bind sgml-delete-tag to a key in html-helper mode so it's
available there.
