Ho-ho, it turns out the snippet Ludo pasted me on IRC was the answer
after all:

  ;; Make sure we work on remote guixsd machines :)
  ;; probably only helps if you start on a guixsd machine..!
  (setq tramp-remote-path
        (append tramp-remote-path
