Even though I (think I) understand what's going on under the hood, the  
behavior of \xNotesOn (or anything that modifies the note head style and is  
reverted with \defaultNoteHeads) can seem quite erratic when you combine  
all of Eluze's examples above:

Now, an easy hack would be to include the <> construct by default in the  
music-functions involved; it works, but I have no idea whether it could  
induce some unwanted side-effects:
