Fwiw, using feta characters, like this, should also work:
\header{
instrument="instruments in B\fetachar\fetaflat"
}
\score{
\notes\relative c'' { c }
}
But, for some reason, the \fetafont and \fetachar macro definitions
have been turned off in lilyponddefs.tex (can we turn them back on, please?).
Remove comment characters '%', like so:
%% The feta characters
\input feta20.tex
\font\fetasixteen=feta16
\def\fetafont{\fetasixteen}
\def\fetachar#1{\hbox{\fetasixteen#1}}
