The answer all depends on what changes you want to make.
A good introduction to the font changing commands of LaTeX
is to read section 6.2 of
http://www.ctan.org/tex-archive/info/lshort/english/lshort.pdf
For example, to get a larger font for the title, you could do
\header{
title = "\\huge My title"
}
It is technically possible to include also many other kind of
fonts in a LaTeX document, but in practice it could be quite
involved, especially the first time you do it.

Hello,
could anyone explain how to change fonts in the \header field?
I found the following information in the documentation:

Markup texts cannot be used in the titling of the \header field.
Titles are made by LaTeX, so LaTeX commands should be used for
formatting.

This does not help me that much, as I know nothing about LaTeX.
