I've been using Lilypond for three things since I learned how:
-Scores of my own personal compositions, mostly organ and 4-part choral
(mostly also unpremiered, although one of the organ ones will finally be
played next February :)
-Two booklets for recurring prayer services at a local church
-A hymnal (which I think I've mentioned before on the list)
For the last two, lilypond-book has been a godsend; the ability to
pretty much seamlessly combine music snippets with properly-typeset text
(I also know and love TeX/LaTeX) is something I'd never had before.
