http://www.htdp.org/ for a manual on Scheme.

lilypond-specific?
No, but all the functions that start with ly: are, and how Scheme and
LilyPond interact is something that is not in official documentation.
However, some information is in 1. the program reference manual 2. the
internal design document (some versions have been floating on the
lilypond-devel list) 3. the chapter on programming interfaces of the
user manual.
Also, asking on the lilypond-devel list can help.
