 In the second measure, I need the half rest to center over the eighth notes, as opposed to aligning to the left like a half note.  Hope this makes sense, and that someone can help!

If you really want that (see Mark message), you can just change r2 by

s8. r2*5/8

Ok if you have a full opera, it can be a bit heavy.
