I don't know what you want to achieve, but
\voiceOneStyle is defined in ly/property-init.ly as
voiceOneStyle = {
\override NoteHead #'style = #'diamond
\override NoteHead #'color = #red
\override Stem #'color = #red
\override Flag #'color = #red
\override Beam #'color = #red
}
so you can define
mySuperVoiceStyle = { ... }
with the settings you like.
