Hi Joshua,
What operating system are you on? On Linux the default PDF viewer is usually evince, which can view EPS files. On windows you may have to install a program to view them, such as ghostscript/ghostview.
If you use pdflatex I think you need to load an extra package (graphicx maybe?) in order to embed EPS files.
