However, there have been few reports of problems against this release,
so I think it's OK.

You shouldn't normally need to apply any patches. They aren't usually
made against a release or intended for end users. The patches for lwIP
are usually new features or bug fixes being contributed into lwIP, and
they will (if we have time/they work/are good features etc) make it into
CVS and then into the next release.
lwIP has undergone a number of changes in CVS since the 1.2.0 release,
so the next release will be a significant one. However, I would still
recommend using 1.2.0 for now as CVS will be somewhat unstable and
untested for the time being.
