Follow-up Comment #1, bug #34715 (project octave):

Here's a patch that hopefully list all of the options and explains a bit of
some.

I have used the help text of fminunc_compat in the octave-forge optim package
to write the help text of some of the options. I then went through all the
functions in scripts/optimization to complete the list of options.
