Follow-up Comment #1:

Thanks for your bug report. I can confirm this on the current development
branch. The "Value" column in the "Workspace" panel is truncated at some
number of characters no matter how wide the column is made.

I am not sure how useful this would be to fix, since all of the elements of
the variables are crammed into a single cell. Being able to view the full
contents of the variable in a popup might be more useful, there have been
patches proposed to provide an interactive data viewer or editor.
