Follow-up Comment #1, bug #47496 (project octave):

If you are able to build Octave yourself, you can try the Variable Editor from
patch #8656. That will allow you to view as large a matrix as you wish (within
screen limits) and even allows editing values and copy/paste to/from other
programs.
Although not quite feature complete, and the usual warnings apply, I find it
very useful and I often invoke it.

I just uploaded a cset I have made a while ago from the patches in that patch
report and that still applies to dev Octave.
Just do not try to use the "autofit" option in its prefs, it'll unacceptably
slow down painting the variable editor pane.
