Follow-up Comment #1:

That is a nice colormap replacement for Jet.  They provide both a lookup table
implementation as well as a polynomial approximation.  Either would probably
be fine.

Colormaps are simply m-files in Octave so very easy to code.  You might take a
look at viridis.m for an example of translating a lookup table colormap to an
m-file.
