BOARD_CONFIG is a define that gets set in the board makefile and it contains the path/name of the board header file.
So when you see #include BOARD_CONFIG in the code, it will include the header file for your board.
See also var/aircrafts/<your_ac_name>/ap_srcs.list for all the defines, flags and srcs...
