What do you mean with different colors for different users in the 
calendar? Are you talking about the planner - the colors in the planner 
depend on the category, not the person.

To completly turn of the prefs for a user, you have to not-check/enable 
the preference-app for them (neither for their account nor for any 
groups they are a member of).
