As I said earlier, there are still a few funny GUI quirks.  It seems
that when procedures are run, data is coming from the new (empty)
datasheet instead of the old one, since the replace_source_callback is
invoked.

Looking at the new improved code in src/data/procedure.c, I'm starting
to think that rather than a replace_source_callback and
a replace_dictionary_callback, what I really need is a single callback
which gets invoked in proc_commit.

But that's largely a guess, since I'm not entirely sure what
proc_commit does, nor what the states PROC_{OPEN,CLOSED,COMMITTED}
actually mean.

Ben, do you have the time to write a brief explaination?
