Using sendmail options work for me:

$ mail -s Test address@hidden -- -f "address@hidden" < /dev/null

Gives:
>From address@hidden  Thu Jan 18 21:19:37 2007
Return-Path: address@hidden

It's more a workaround than a solution though.
