Estou estudando o sed profundamente há 3 semanas e nunca vi algo deste tipo.
o padrão que se encontra em todas as referencias da net e no manula do sed:
sed "$a\string" arq.txt
e a solução apresentada:
sed '$'a`date +%Y_%m_%d`' - string' arq.txt
