1) I would like xboard to automatically save the game on the hard
drive once I finish playing it. Is this possible?
Yes: you can tick 'Auto-Save Games' in the Save Game Options dialog,
and specify a file there. All games will then automatically be appended to the
specified file when they finish.

2) After finishing playing the game, I can do File -> Save Game to
manually save a game. However, the filename of the pgn file is set to
whitePlayer-blackPlayer.pgn by default. Is it possible to rename this
as whitePlayer_vs_blackPlayer_YYYYmmDD_HHMMSS.pgn? Here YYYYmmDD and
HHMMSS correspond to the date and time of the game.
Currently there the default proposal for the name of the save file is hard-coded. But it could be an idea to make this user-configurable through an option. For the tournament file defining engine-engine tourneys such an option already exists,
and can indeed make use of date and time components.

'Time' is not a standard PGN tag. I guess XBoard could be equiped with an option to generate such a time tag. Not sure what it is supposed to contain, however.
The time that the game started? Or finished? Or was saved?
3) The pgn file stored from xboard does not seem to have the time
information. But the pgn file emailed by FICS server contains this
information. Is it possible to store the time information into the pgn
saved via xboard -> File -> Save Game?

For example, this is what I see from a pgn stored via xboard
