That's correct, you can't run strip reliably on a file that is being written.  
That's true for example if you try to run strip on a ld output file before ld
has completed.  It is also true if you run strip on a file that is being
written by another invocation of strip.  Which is what is happening here when
you have files with multiple hard links.
