If you have a better alternative for guessing the suitable encoding of
the reply, please suggest it.  For me, it works in 99% of cases.

As usual in Emacs: when you hit "C-c C-s" or "C-c C-c", Emacs asks for
a suitable encoding, showing the unencodable characters in a pop-up
buffer.  The message is sent using the encoding you selected once you
select it (and Emacs verified that it can encode every character).
