I think you're right that __ENVIRONMENT_MAC_OS_X_VERSION_MIN_REQUIRED__ 
is predefined; see

There's a similar macro __ENVIRONMENT_IPHONE_OS_VERSION_MIN_REQUIRED__ 
for iOS.
