Wine: not yet available.

to get working.

Firefox: should work.  There have once been issues with https transport;
no idea whether that has been resolved, but I have a hard time thinking
of a real show-stopper there.  Note that I, mostly working on the
toolchain and related stuff, have not run X and a desktop environment on
GNU/Hurd in a long time.

FVWM2: should work.

GRUB 2: works.

UEFI/Mac hardware: no idea if anyone ever has tried that.  Most of us
either use virtual machines (KVM/QEMU, VirtualBox, Xen domU) or our
elderly 32-bit x86 CPU-based hardware with IDE HDD connectivity.  If
especially the latter two are satisfied with your hardware, it should "at
most" be some GNU Mach hacking required to get it running, and we can try
to assist with that.

WiFi: limited support is available (no firmware loading implemented, for
example), and only PCMCIA as far as I know (see the end of
<http://www.gnu.org/software/hurd/gnumach-doc/Configuration.html>), which
has years ago been imported from version 3.2.8 of the pcmcia-cs package.
I think Stefan Siegl (the guy who did that project) has been able to use
his Orinoco card.  I don't think anyone already has tried getting WiFi
drivers working in the more current (Linux 2.6-based) DDE network device
driver enviroment.
