\cresc c
equivalent to
c \setTextCresc \<

? Why not go with a postfix \cresc? (thus "\cresc" = "\setTextCresc \<" )

- Why is it done this way (I see there's a comment in
 ly/spanners-init.ly related to the same question)

No clue.

- Why isn't this documented, if this is the way it should be?

No clue.  :)

If this is the way it should be, I'm happy to document it. For now, I think
we should wait to hear from Han-Wen and Jan in a week.
