What version of LilyPond do you use and what version of the manual did you read? This option was introduced in version 2.9.something so you can't use it if you version 2.8.
2) lilypond-book --psfonts probe.lytex Error message is `kpsewhich probe.lytex' failed
Really strange! What version of LilyPond do you use and on what operating system?
